Lacey Cookies Recipe (modified)

I've been trying to make a good recipe for chocolate sandwich lacey cookies.  However, every time I baked the cookies, they came out too soft, not crunchy.  The key is to cook them longer until they are a dark brown, and then they are crunchy.  I think next time I will also melt the butter before mixing in ingredients.  Like chocolate chip cookies, that should make the cookie crunchy.  I started with the Katherine Hepburn Lacey Cookies recipe from the Taste of Home message board and made my own modifications.

Ingredients:

1/4 cup soft butter
1 egg
1/2 Tsp vanilla
1/3 cup raw sugar
2/3 cup firmly-packed dark brown sugar
1-1/3 Tbs. all-purpose flour
1 cup finely chopped almonds
1 orange zest
Beat butter and vanilla together till smooth.
Add raw sugar, brown sugar, flour and egg to the mixture. Mix thoroughly and stir in the nuts and orange zest.
Drop nickel sized dough onto a Silpat matted cookie sheet.  They will spread a lot.
Bake at 350 degrees for 7-8 minutes. Cool completely before removing.  Melt semi sweet baking squares over a hot water bath.  Spread some chocolate between two cookies.
